Ethically Sourced, Perfectly Roasted: Our Colombian Coffee Adventure

Ethically Sourced, Perfectly Roasted: Our Colombian Coffee Adventure

At Gringo Roasters, every cup of coffee tells a story, and our single-origin Colombia coffee is no exception. It’s the result of an incredible journey through the lush mountains of Tolima, where we met with local farmers and coffee experts whose dedication to their craft is as inspiring as the vibrant landscape they call home.

Discovering Cafe del Macizo

Our adventure began in the foothills of the Cordillera Central mountain range in Tolima, Colombia. Here, we connected with the farmers of Cafe del Macizo, a cooperative founded in 2003 in the countryside municipality of Planadas. This group of 59 lifetime growers shares decades of expertise, working together to produce exceptional, organic coffee.

As we walked through their farms, we saw first-hand the meticulous care they put into every step of the process. From planting and harvesting to washing and sun-drying the beans, their dedication was evident in every detail. These farmers don’t just grow coffee—they nurture it, preserving traditions passed down through generations.

From Farm to Cup

We tasted coffees grown at altitudes of 1,500–2,100 meters, where the unique combination of elevation, climate, and volcanic soil creates a coffee profile unlike any other. After countless cupping sessions with local experts, we fell in love with the vibrant complexity of their Caturra, Castillo, and Tipica varietals.

This exceptional coffee is classified as Excelso, EP, ensuring top-grade quality. Each sip reveals a medium acidity and a rounded body, with notes of dark chocolate, mango, and peach creating a rich yet juicy profile. The natural complexity of this coffee reflects the care and environment that shaped it, offering a flavor journey that’s as bold and dynamic as the landscape itself.

The Beauty of Sustainability

What stood out most during our time with Cafe del Macizo was their commitment to sustainability. These farmers have mastered environmentally friendly practices that ensure the long-term health of their land and community. The coffee is organic-certified, a testament to their dedication to preserving the lush, fertile environment of Tolima.

Bringing the Taste of Colombia to You

Back home, we carefully roast this coffee to a medium roast to highlight its natural sweetness, complexity, and vibrant character. The result is a beautifully balanced cup that’s as fresh as the day it left Tolima. Whether you’re savoring the rich dark chocolate base or the bright, tropical notes of mango and peach, every sip connects you to the story of the farmers and the mountains where it all began.
